The bakery of the Capitaine Levain is a place of baking that returns to ancestral methods of breadmaking. Our products are made entirely by hand, from kneading to shaping, and benefiting from fermentation and long cooking for more digestible breads, maximizing flavors and a caramelized and crunchy crust. Our rustic breads are made from 100% organic raw materials and, of course, 100% sourdough. For now, the cooking is done in the oven on electric floor but possibly a wood oven with direct heating will be built in the bakehouse.

We are sowing, harvesting our own varieties of old (pre-war) wheat for breeding purposes and, within 4-5 years, to be self-sufficient with our grains. The installation of the mill on stone will allow us, while waiting for our grains, to get local organic cereals to grind ourselves and always have a fresh flour.

*The batches are from Tuesday to Friday and you have until the day before each batch before noon to order.
